We are trying to setup 2 SquaredUp servers that connects to the same SCOM Management Group -
We are not interested in a HA solution but rather 2 separate Squaredup servers with different content, but from the same SCOM environment - Is that possible, license - wise etc.

Yep you can connect two separate instances of SquaredUp to the same SCOM MG. But you would need a separate license for each.
If your reason for this is to have separate dashboards for different users, then you could look at using Team Folders instead:
