Have a dashboard with a status donut scoped to a group, class = windows server and the criteria IsAvailable=‘false’
This gives us the information we need, however I only really want the number of them all.

Just to make sure I’ve understood - are you looking for a Scalar visualisation for the status tile? E.g. like the scalar tile visualisation for the for alerts tile but visualising a count of health states (statuses) rather than a count of alerts?

That sounds right. So just the total count rather than split by Healthy, Warning, Critical.
I just want to double check as if I setup the status tile > donut visualisation as follows:
The number I get is just the total (in my case the total is 2 - 1 warning and 1 healthy):
Hence, would it be sufficient just to hide the donut (and leave the scalar value in place) as I appreciate the multi-coloured visualisation is likely to be distracting.
We’re looking at solutions and it might be a switch for “hide donut” is sufficient? If it isn’t are you able to mock up an ideal solution and either PM me or post here.

Yes, I think just hiding the donut would be sufficient.
